This is the fourth module of Nutrition Essentials and it provides an overview of fat. During this module we will review fats. Fats, also called lipids, are a class of compounds that include fatty acids, triglycerides and cholesterol. Our review of fat will include: a review of fat benefits and definitions, types of fat, digestion, the effects on health of the various type of fats, dietary recommendations and educational tools.

This module helps Area on Aging volunteers to make Nutrition Risk Assessments using the tool DETERMINE. Nutrition risk factors are reviewed and consumer handouts are provided. After completion of this module, volunteers will have a better understanding of the DETERMINE Nutrition Risk Assessment.
