Cooking up a Cottage Food Business
In Texas, the Cottage Food Law allows residents to prepare and sell specific foods from an unlicensed residential (home) kitchen. This course is designed to help people who want to start a cottage food production operation out of their residence. Through this course individuals will gain knowledge of the Texas Cottage Food Law and general rules and best practices for preparing food safely.

Smart Goals for a Smarter Weight
This on-line course will help you to identify and meet goals to achieve a healthier weight. Setting goals and specific weight related tips are discussed. Food Handlers for Cottage Food Businesses
Beginning January 1, 2014 an owner of a Cottage Food business is required to have a food handler´s card form a state accredited program. Our accredited food handler´s course will help you learn basic food safety practices that can help assure the food you prepare and sell is safe.

Nutrition Essentials #1: Overview
This education series is an on-line course providing an introduction to nutrition called Nutrition Essentials. This module of Nutrition Essentials provides an overview. Other modules in the Nutrition Essentials series include: Carbohydrates, Protein, Fat, Vitamins, Minerals and Water. Modules build on one another and are best when taken in this sequence. During this module we will lay the foundation for the other Nutrition Essentials sessions. Our overview will include: A brief review of the discipline of food and nutrition, anatomy and energy also known as calories. We will look at the Dietary Guidelines for Americans and how the Guidelines shape educational tools such as the Food Guidance System called MyPlate and the Nutrition Facts labels. We will also explore the role of the nutrition educator versus the role of the Registered Dietitian. This series is designed for educators of the public.

Nutrition Essentials #2: Carbohydrates
This module of Nutrition Essentials includes the categories of carbohydrates including fiber; digestion/ absorption;common related medical conditions; recommended intakes (Dietary Guidelines for Americans, 2010); a discussion of nutrient-dense foods/beverages, refined grains/added sugars with current food sources of each; carbohydrate to be increased and those to be decreased.

Nutrition Essentials #4: Fat
This is the fourth module of Nutrition Essentials and it provides an overview of fat. During this module we will review fats. Fats, also called lipids, are a class of compounds that include fatty acids, triglycerides and cholesterol. Our review of fat will include: a review of fat benefits and definitions, types of fat, digestion, the effects on health of the various type of fats, dietary recommendations and educational tools.

Feeding Young Children with Special Food Needs in Child Care Settings
This course "Feeding Young Children with Special Food Needs in Child Care Settings" is intended for child care providers, parents, families, teachers, county agents and other professionals working with these children. This 1.5 hour course addresses the special food needs for medical conditions for preschool and kindergarten children. It is of utmost importance for the parents of children with special medical conditions (food allergies/intolerances, hyperactivity,choking, diabetes, and developmentally challenged) to provide the child care providers with the following: dietary meal plans and self-care instructions from their physician and dietitian with any special dietary requests for meals/snacks; and any special feedings or medications that they must be given to assist them in feeding all children in child care settings.
